I have been on this fruity dessert kick. I’m not a fan of heavy desserts so these Pineapple Cupcakes were perfect. It finally hit 65 degrees here and it’s celebration time. Plus I was trying some recipes for my friends bachelorette party next weekend and these came out better than expected.

I bought a can off Crushed Pineapples in 100% pineapple juice. The pineapple taste was good enough for me but if you want more of a pineapple punch add more pineapple juice to the icing or use a can of pineapple in heavy syrup instead.

I recommend making the icing first then sticking it in the fridge so it can stiffen before piping.

PINEAPPLE CUPCAKE
  1. 1-1/2 cups All Purpose Flour
  2. 1-1/2 tsp Baking Powder
  3. 1/2 tsp Kosher Salt
  4. 1 cup Granulated Sugar
  5. 1 stick Unsalted Butter (room temperature)
  6. 1 large Egg (room temperature)
  7. 2 large Egg Yolks (room temperature)
  8. 2 tsp Pure Vanilla Extract
  9. 1 container of Pineapple Yogurt or 1/2 cup Sour Cream
  10. 1 cup Crushed Pineapple (strained)
  11. 3 tbsp Pineapple Juice
PINEAPPLE WHIPPED CREAM CHEESE ICING
  1. 2/3 cup COLD Whipping Cream
  2. 1 package (8 oz) Cream Cheese
  3. 1/2 stick Butter (room temperature)
  4. 1 tsp Pure Vanilla Extract
  5. 3 Tbsp Pineapple Juice
  6. 1 cup Confectioners' Sugar
  7. Maraschino Cherries for garnishing (optional)
PINEAPPLE CUPCAKES
  1. Preheat oven to 350°F. Line Cupcake tin with liners.
  2. Quickly mix Flour, Baking Powder and Salt together
  3. In a separate bowl mix together Sugar and Butter well
  4. Add in Pineapple, Eggs, Vanilla, Yogurt and Juice until pineapple is broken down. Scrape down sides with plastic spatula throughout entire process.
  5. On low speed slowly add in dry ingredients until combined.
  6. Increase speed to medium until batter is silky.
  7. Fill liners to 3/4 full and place tin in oven on center rack.
  8. Bake for 22 minutes. Transfer to cooling rack.
PINEAPPLE WHIPPED CREAM CHEESE ICING
  1. Whip cold Whipping Cream until soft peaks form
  2. Mix in Cream Cheese, Butter, Vanilla Extract, Pineapple Juice and Confectioners' Sugar for 2-3 minutes or until icing is thick and fluffy.
  3. Pipe icing on cool cupcakes and garnish with Maraschino Cherries
